THE BLACK BEAN BURGER. Oh my goodness. If you need something simple and delicious give this a try. This is one of the things my clients love. You can make a pile of these, toss them in the fridge and heat up when you need something quick!
You will need the following:
- Shallots (I get my shallots from trader joes, they are by far the best price wise!)
- fresh garlic
- chopped green bell pepper,
- panko breadcrumbs,
- 1 egg
- can of black beans (rinsed and drained)
- avocado oil
In a bowl mash up your black beans but not totally. You want some of those black bean chunks left in there for your burger. In a skillet I sauteed the garlic, green pepper and shallots in avocado oil. After those ingredients were tender i added them to the bowl of black beans, added panko and egg. Mixed all together and made a patty out of my mixture. I added a little more oil to my pan and turned it up high and added the “burger” cooked for just a few minutes and boom. You have yourself a fabulous lunch. I put mine on a bed of baby romaine and topped it with some fresh Parmesan shavings and avocado. Enjoy ya’ll.
